What better way to enjoy the start of autumn than enjoying fine wine, fabulous food and great friends, while bathing in the sunlit splendour of Cellos Grand Dining Room.

Elysian Springs Estate is located in the pristine northern end of the Adelaide Hills district, and we are pleased to welcome John Pratt, Co-owner of Elysian Springs, to share his knowledge and wonderful wines.

Elysian Springs Wines “A little closer to Heaven”

Our Vinuous History

Originally planted in 1972 by the Seppelt family, the site was selected due to its geographic and climatic similarities to the Champagne region in France. Seppelt, who were predominantly sparkling winemakers, planted the classic champagne trio of Chardonnay, Pinot Noir and Pinot Menuiere. To supplement very cold vintages they also planted a small acreage of Sauvignon Blanc in case of cool ripening conditions.

In addition, nearly half of the vineyard was planted with Shiraz, believing that Sparkling Burgundy would take off! Alas, when Penfolds acquired the vineyard in the ’80s, they recognised the Shiraz, not for its Sparkling potential but to use in Grange, Bin 389 for the next 11 vintages.

Our Winemaker

Brad Rey, who is doing his 28th vintage this year, is the man at the ‘helm” directing traffic from vineyard to winery. His first foray into Australia followed from successful stints in the Napa Valley and Burgundy, which he utilised to craft the early Wirra Wirra wines and the pioneered Sangiovese at Coriole in McLaren Vale.

In 2014 an opportunity came up for both John and Brad to purchase the vineyard, known affectionately as “Little Closer to Heaven” referring to its 400 metre altitude above sea level.

Biodynamics

Both men have long agricultural backgrounds in both vineyard and dairy farming. They have realised the importance of sustainable farming practices and ‘giving back to the land”.

With these principles in mind, it is a working property with sheep agitated in the winter, replenishing the soils during the harsh winter months. Beehives, drawing on the local stringybark gums for the purest of honey and trout in the dam to purify the water and keep mosquito infestation to a minimum.

These principles follow through to the wine with the use of natural fertilisers and sprays – minimising or eliminating sulphur use completely. This minimal intervention in the winery creates wines of purity and elegance!
